For the vanity, where the medecine cabinet usually goes over, you definitely want to have a surface mounted light on the wall, either above the mirror, or to both sides.
If you choose sconces though, make sure you get ones that will be bright enough, ones designed for bathrooms will give you light, but other ones are sometimes meant to be more decorative than functional, and don't give a lot of light.
The reason for this is that when you shave, or if your wife does her makeup there, recessed lights cast horrible shadows, while a surface mounted light, puts the light where you want it
